You can't leave Palermo without having tasted a good foccaccia with spleen, it's a part of every real Palermo Experience. An ancient, traditonal treat of Palermo's street cusin, this focaccia is sandwich made of fried beef spleen served with some drops of lemon juice, salt, and in some cases with a little local, caciocavallo cheese.

The street spleen sandwich vendor (called meusaro) is going to stuff your focaccia in front of you, with a few slices of soft spleen, and than adding to them salt and some drops of lemon juice, than he is going to give  you the focaccia warped in paper napkin.
